Two-year-old restaurant in the Forum Shops at Caesars Palace closes

An upscale Mexican restaurant near RPM Italian in the Forum Shops at Caesars Palace is closing next month. Sol Mexican Cocina opened in November 2022 with a Baja-style design and an opening featuring Bruno Mars. The restaurant will close in September.

Sol Mexican Cocina will close on September 30, according to the Las Vegas Review-Journal, reports that the State of Nevada has been served with a WARN notice indicating planned mass layoffs. The closure will mean the loss of 70 jobs.

The 11,000-square-foot restaurant is airy, with cool tan sheets hanging from the ceiling and an ornate centerpiece, a sculpture made of branches and fabric. While the design is striking, it is also inconvenient to get to—it is almost as far from the mall entrance as you can get from the casino. To reach the restaurant, you must circle around a famous disabled path to reach the escalator that takes visitors to the street level where Sol is located.

The menu ranges from more traditional Mexican fare to modern takes, including Vampiro chicken tacos, a Canarditas duck dish that combines deep-fried duck leg confit with tequila-infused blackberry serrano salsa, and a grilled street corn appetizer served tableside. Bruno Mars’ SelvaRey rum line lightens up the tequila- and mezcal-dominated cocktail menu with a Cold Bruno Espresso Martini, which Mars helped develop. Other drinks are made with Cardi B’s boozy Whipshots whipped cream. A cocktail called the Chainsmoker uses the DJ duo’s brand of tequila to create a cocktail overflowing with smoke.

Southern California-based Xperience Restaurant Group did not respond to a request for comment on the closure.
