Pasta in the sink, expired chicken, food on the floor: Chattanooga-area restaurant inspection reports for the week ending August 13, 2024

Hamilton, Catoosa and Walker county health departments inspect restaurants twice a year and rate them on a 100-point scale. Restaurants are re-inspected if they fail to meet critical standards. Ratings are initial and do not reflect on-site changes, which sometimes result in upward adjustments.

The reasons for this include: Lack of management oversight; no paper towels were available at the hand sink; raw in-shell eggs were stored on a rack under the hand sink; no shell labels or records of parasite destruction of oysters, mussels or scallops were present; white rice was stored at room temperature; corn on the cob and potatoes on the steam table were stored at the wrong temperature; white rice in the walk-in cooler was stored at the wrong temperature and staff were unsure when it was done; no date was visible in the kitchen or walk-in cooler; consumer guidance was not followed; a container of pasta was placed on the triple sink; eating utensils were stored with the eating surfaces facing up and next to the hand sink, with some touching the sink; cooking utensils such as pots and colanders were stored under the triple sink, some of which came into contact with plumbing; packaged disposable utensils were stored under the hand sink; the triple sink method was not used; the triple sink faucet did not reach the third compartment; and the mop sink was not used because staff poured dirty water on the floor behind the facility.

Reasons include: The responsible person did not control foodborne illness factors; raw chicken was stored above raw pork and beef; queso on the steam table was reheated to an incorrect temperature before being held warm; several food items were missing dates; a tray of chicken on August 9 had a date of July 30 on it; chicken was left to cool in large pan portions; several wet rags were left on the counter; and utensils without handles were stored in the product.

Reasons include: spoiled food was in the walk-in cooler; the amount of disinfectant on the dishwasher was not adequate; numerous food items stored for more than 24 hours were not date-labeled in the walk-in cooler; food was stored on the floor in the walk-in cooler, freezer, and dry storage area; clean dishes were stored on dirty surfaces; non-food contact surfaces on the cooktop were dirty; hot water was not available at the handwashing sink next to the triple sink; the walls next to the triple sink were dirty; and clutter and worn items in the kitchen prevented proper cleaning and disinfection.
