‘Exciting new chapter’: Popular Bucks County brewpub opens second location in Easton | Food, Drink, Shop

EASTON, Pennsylvania – A tasty new business is brewing in Northampton County.

Vault Brewing Co., a Bucks County-based brewpub offering unique craft beer and food made with locally sourced ingredients, is expected to open a second location at 225 Ferry St. in downtown Easton in late October.

The Easton location will operate in a building between Sette Luna Tuscan Trattoria and the newly opened Albanesi Restaurant & Bar, which will be renovated soon.

Vault was founded in 2012 at 10 S. Main St. in Yardley, said Allyson Malandra, Vault’s marketing director. The late 19th-century building was originally the headquarters of Yardley National Bank.

Vault’s ownership team, led by managing partner Scott Burney, has been looking to expand the brewpub’s presence in recent years and found Easton to be an attractive location.

“We wanted to expand the horizons of our beer and our food because we think what we have is very special,” said Malandra.

“So we looked and found this absolutely beautiful building in Easton, and it just fit us. It felt right and made sense.”

Vault brews a wide variety of craft beers, including ales, lagers, sours and stouts, Malandra said.

Customers can enjoy a rotating selection of options including a Fully Vested hazy IPA, Too Big to Fail imperial stout, Blind Trust hazy New England IPA, Short Squeeze sour ale, Safe Haven pale lager, Gentlemen Prefer Bonds blonde ale, Liquid Asset farmhouse saison, Liquidator double bock, Opening Bell breakfast stout, Bear Hug nitro oatmeal stout, Overdraft Viennese style lager and Peach Drips creamsicle ale.

“Some beers we’re really known for are our Platter, an American Pilsner, as well as our IPAs and hazy IPAs like Of Hops & Clouds and Public Offering,” Malandra said.

Vault also serves a selection of local wines and cocktails featuring local spirits.

Food options include shareable snacks like pork belly fries, Spanish octopus, chips and guacamole and 12-inch pretzel braids (served with brown mustard and beer cheese); grab-and-go snacks like Philly cheesesteak, pastrami pretzel rolls, chicken souvlaki and shrimp tacos; and wood-fired pizzas like grilled peach and prosciutto, duck and apple, brown sugar buffalo and wild mushrooms.

Mozzarella cheese, tomatoes and other fresh ingredients come from local farms.

“In Easton, we won’t have a wood-fired oven, but there will be a very similar menu with some new offerings,” Malandra said.

“We are known for our Buffalo cauliflower and will definitely be bringing that to Easton. We will also continue to offer pizza as well as our cheese and charcuterie boards, all made with delicious, local and seasonal ingredients. Our snacks and appetizers are perfect for sharing and we will also be bringing our delicious sandwiches, tacos, cheesesteaks and burgers.”

Vault’s upcoming Easton location will feature an open concept with an industrial aesthetic, Malandra said. There will also be an outdoor patio.

A new bar will be built in the front part of the ground floor and new kitchen equipment will be installed in the rear part.

There will later be an event room on the second floor, Malandra said.

“While it’s not an old bank or financial building, there’s undeniably something of us in this space and we’re excited to welcome it into our ranks,” said an announcement posted on Vault Brewing Co.’s social media pages Monday morning.

“At Vault Brewing Easton, we want to offer you the same high-quality craft beer you know and love from us, as well as a local and seasonal menu from Chef Will. You may recognize some of the classic dishes we’re known for on our new menu, but look out for many new and exciting dishes to come.”

As of 8 p.m. Monday, the online announcement on the company’s Facebook page had generated more than 300 positive reactions and over 35 comments, mostly from customers sending congratulations to Vault’s owners and employees.

Several people also pointed out that the location was more convenient for them.

“Aww this makes me soooo happy. As someone who recently moved from Burlington County to the Lehigh Valley, I miss my visits to Vault!” one person commented.

“I’m excited, it’s literally a short walk from my apartment!” wrote another person.

The Easton Brew Pub will be Vault Brewing’s second location and the sixth business under the Vault Brewing & Companies umbrella.

In addition to Vault Brewing Co., the ownership team also operates a cafe in Yardley, as well as burger, sushi and barbecue joints, Malandra noted.

“We are thrilled to open this new location in Easton, which is growing at its own pace,” said Malandra. “It’s an exciting new chapter and we can’t wait to welcome everyone – new and old friends.”
